Let’s make mini toasted corned beef hoagie!
Ingredients you will need:
- Mini hoagie rolls from your bakery
- Corned beef sliced thin from deli
- Sharp provolone cheese from the specialty cheese section
- 1/4 cup of mayo
- 1 tbsp ketchup
- 1/2 tbsp white vinegar
- 1 tsp sugar
- 1 tsp sweet pickle relish
- 1/2 tsp onion, minced
- Dash salt
- Dash pepper
For the Thousand Island dressing:
- Mix Mayo, ketchup, white vinegar, sugar, sweet pickle relish, onion, salt, and pepper.
- Set in fridge covered to let the flavors set and sugar blend (the longer it sits the better).
Let’s make a mini hoagie:
- Heat pan on med-high heat with some Pam.
- Fill the pan with corned beef to toast the meat .

- While the meat is toasting and adding more flavor to itself slice thin pieces of the sharp provolone cheese….enough to cover one half of the inside of your roll.
- Once the meat is nicely toasted remove from pan and place a good amount on your hoagie roll.
- Top with your homemade thousand island dressing!
