So let’s make some granola bars!
Ingredients for this recipe:
- 1/2 cup almonds
- 5 tbsp almond butter
- 1/4 cup brown sugar
- 1/4 cup honey
- 2 tbsp honey
- 1 tbsp butter
- 1 1/2 tsp vanilla extract
- 1/8 tsp salt
- 2 cups quick instant Oates
- 1 3/4 cups rice crispy cereal
- 1/4 cup flax meal
- Line a glass baking pan with foil overlying the handles so it will be easy to remove later.
- in a food processor chop 1/2 cup almonds. Some will be finely chopped while others will be in small pieces. Set aside for later

- In large pot add almond butter, brown sugar, butter, and the 1/4 cup honey.
- on med-high heat stir constantly until sugar dissolves and mixture combined. Careful not to let mixture burn or stick to pot.
- turn off stove and remove pot from heat.
- add vanilla and salt and mix.
- place your pot back on the warm burner but keep the burner off. Add Oates, rice crispy cereal, flax meal, and the chopped almonds to the mixture.

- fold all the ingredients together.
- Drizzle 2 tbsp honey over all the ingredients and continue to fold the ingredients mixing until well combined.

- pour the mixture onto your foil lined glass baking dish.
- press down the granola.
- Refrigerate until firm ( about an hour)

- pull the tinfoil out of the baking pan flipping the granola onto a cutting board. Remove the tinfoil and cut your granola into bars.

* the granola will be hard. You can let it sit a minute to soften so it is easier to cut.
* keep your bars in a sealed container in the refrigerator. They will be hard. You can eat them crunchy or chewy (when ready to eat one let it sit out of the refrigerator for a minute or two to soften and have a chewy granola bar)! We like ours chewy!! Mmmm
*before step 11 you can decide to add chocolate chips and then press down the granola or maybe just drizzle with chocolate or peanut butter? The options are endless!

We love these granola bars! It’s a great recipe on its own or a great base recipe to work from. The options really are endless. We’ve done peanut butter and peanuts instead of almonds, we’ve mixed in dried fruit, etc. Once we turned these into “almond joy” granola bars. We added a touch of unsweetened cocoa powder to the wet mixture and coconut flakes to the dry mixture 🙂
