So, let’s make a wrap!
Ingredients Needed:
- 1/2 Cup chopped Red Pepper
- 1 jalapeno Pepper, chopped
- 1/3 cup chopped onion
- 1 tsp vegetable oil
- 1 tomato, chopped
- 2/3 cup black beans, rinsed
- 1/3 cup corn, thawed
- 1/2 tsp dry cilantro
- pinch salt, to taste
- flour tortilla
- sour cream
- cheddar cheese
- Chop your peppers, onion, and tomato.
- Drain and Rinse the black beans and set aside.
- Thaw the corn.

- In a pan on Medium heat add 1 tsp vegetable oil
- Add to the pan and saute the red pepper, jalapeno, and onion for 3 minutes then remove from heat and place in a large bowl.
- Add the tomato, black beans, thawed corn, cilantro, and salt to the large bowl of pepper and onion mixture. Stir.

- Turn the oven to 350 (no preheating) and place your flour tortillas in for 4-5 minutes.
- Remove from oven and prepare your yummy wrap.
- Spread some sour cream on the tortilla, layer with the bean, pepper, vegetable mix, and top with shredded cheddar cheese!
