Black Bean Wrap

So, let’s make a wrap!

Ingredients Needed:

  • 1/2 Cup chopped Red Pepper
  • 1 jalapeno Pepper, chopped
  • 1/3 cup chopped onion
  • 1 tsp vegetable oil
  • 1 tomato, chopped
  • 2/3 cup black beans, rinsed
  • 1/3 cup corn, thawed
  • 1/2 tsp dry cilantro
  • pinch salt, to taste
  • flour tortilla
  • sour cream
  • cheddar cheese
  1. Chop your peppers, onion, and tomato.
  2. Drain and Rinse the black beans and set aside.

  4. In a pan on Medium heat add 1 tsp vegetable oil
  5. Add to the pan and saute the red pepper, jalapeno, and onion for 3 minutes then remove from heat and place in a large bowl.
  6. Add the tomato, black beans, thawed corn, cilantro, and salt to the large bowl of pepper and onion mixture. Stir. 20160411_192238
  7. Turn the oven to 350 (no preheating) and place your flour tortillas in for 4-5 minutes.
  8. Remove from oven and prepare your yummy wrap.
  9. Spread some sour cream on the tortilla, layer with the bean, pepper, vegetable mix, and top with shredded cheddar cheese!

Makes 5 medium wraps
