So let’s make Penne, Prosciutto, Asparagus Salad!
Ingredients for this Recipe:
- 2 tbsp Red Wine Vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp sour cream
- 2 tbsp parmesan cheese, fresh grated (found in specialty cheese section of market)
- 1 clove garlic, pressed
- 1/4 cup olive oil
- 12 oz penne pasta
- 1 lb Asparagus
- 1 red pepper
- 6 oz prosciutto, thin sliced
- 1/2 cup kalamata olives, de-seeded and chopped
- 1/2 cup & 1/4 cup cheddar cheese, cubed
- 1/4 cup mozzarella cheese, cubed
- 1/3 cup fresh parmesan cheese, cubed
Dressing:
- Garlic press 1 garlic clove into a medium-sized bowl
- Add the red wine vinegar, salt, black pepper, sour cream, parmesan cheese (fresh grated), and olive oil.
- Whisk all the ingredients until well blended
- Set aside for later.

Salad:
- Boil Penne Past about 12 minutes
- Remove from heat and rinse with cold water until pasta is no longer hot.
- Place cooled pasta into a very large bowl.
- Rinse Asparagus and in a pan sprayed with pam on Medium Heat saute the asparagus for 2 minutes with a pinch or two of salt.
- Remove Asparagus from heat and chop into fours (approximately) and add to the large bowl.

- Add 1 chopped red pepper to the bowl
- Take 6 oz (or more to taste) of prosciutto, chop and add to the bowl
- Take 1/2 cup Kalamata olives and de-seed, chop and add to the bowl
- Add the cheddar, mozzarella, and parmesan cheese to the large bowl

- Top everything in the bowl with the homemade dressing and stir all together.
*I feel like I said the word “bowl” too much 😉
