Penne, Prosciutto, Asparagus Salad

So let’s make Penne, Prosciutto, Asparagus Salad!

Ingredients for this Recipe:

  • 2 tbsp Red Wine Vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp sour cream
  • 2 tbsp parmesan cheese, fresh grated (found in specialty cheese section of market)
  • 1 clove garlic, pressed
  • 1/4 cup olive oil
  • 12 oz penne pasta
  • 1 lb Asparagus
  • 1 red pepper
  • 6 oz prosciutto, thin sliced
  • 1/2 cup kalamata olives, de-seeded and chopped
  • 1/2 cup & 1/4 cup cheddar cheese, cubed
  • 1/4 cup mozzarella cheese, cubed
  • 1/3 cup fresh parmesan cheese, cubed

Dressing:

  1. Garlic press 1 garlic clove into a medium-sized bowl
  2. Add the red wine vinegar, salt, black pepper, sour cream, parmesan cheese (fresh grated), and olive oil.
  3. Whisk all the ingredients until well blended
  4. Set aside for later.20160412_185426

Salad:

  1. Boil Penne Past about 12 minutes
  2. Remove from heat and rinse with cold water until pasta is no longer hot.
  3. Place cooled pasta into a very large bowl.
  4. Rinse Asparagus and in a pan sprayed with pam on Medium Heat saute the asparagus for 2 minutes with a pinch or two of salt.
  5. Remove Asparagus from heat and chop into fours (approximately) and add to the large bowl.20160412_190300
  6. Add 1 chopped red pepper to the bowl
  7. Take 6 oz (or more to taste) of prosciutto, chop and add to the bowl
  8. Take 1/2 cup Kalamata olives and de-seed, chop and add to the bowl
  9. Add the cheddar, mozzarella, and parmesan cheese to the large bowl20160412_192117
  10. Top everything in the bowl with the homemade dressing and stir all together.

*I feel like I said the word “bowl” too much 😉
